Have you ever messed up and wondered how did that ever happen to you?
This time I goofed up big and felt like kicking myself really hard for it. Imagine, I merrily went on on a clicking spree only to realize later on that the memory card was missing in the camera!! Yikes!! I can't believe this was truly happening to me. I felt like howling. All the pictures I had clicked were gone and all my effort had gone waste.
But actually its my husband's fault. It is always his fault!! (Oh! How good it feels to say that and how nice when there is someone else to blame for your stupidity.) But in a way he is responsible as after our last trip he downloaded pictures from the various cards and later just forgot to put the card back in the camera.
But in the end I could do nothing about it except sulk big time. So many hours of setting and arranging, trying to get the best possible angles for your pictures and you end up with nothing. My saving grace was my iPad from which I took the remaining photographs - which aren't too bad - but by this time I had already sliced up the cake. I was also feeling bad as I had made the same cake a day earlier but it vanished before I could say "Jack Robinson" and I had baked it a second time especially to click some pictures. Anyway, the moral of the story is - Always check that your memory card is in the camera before you start taking pictures.
What was I clicking?? I made this heavenly condensed milk cake with a beautiful golden brown crust. The taste reminds me so much of the Brittania cakes that we get in the market - maybe even better. It was so tasty that the first time around it disappeared within minutes. Incredibly moist with a beautiful rich buttery taste and a subtle sweetness from the condensed milk its no wonder that this cake is so hard to resist.

11/2 cups flour
1 cup sweetened condensed milk
3/4 cup powdered sugar
1 cup unsalted butter
3/4 tsp baking powder
1 tsp Vanilla essence
1 pinch salt.
Sieve the flour and baking powder till well combined.
Beat butter and sugar together for 3-4 minutes with an electric beater until soft and fluffy.
Then add the condensed milk and repeat for the same time till well combined.
Whisk eggs in a bowl for 2 mins with a fork and set aside. Add the flour to the butter - sugar- condensed milk mixture and mix until just combined without beating too hard.
Add eggs, vanilla essence and eggs and beat again for a couple of minutes till well mixed.
Transfer to a greased cake tin or loaf pan and bake in a preheated oven at 180C for 30-35 minutes till done.Insert a toothpick in the center to test if the cake is done.
Cool, slice and serve.
